Sunflower relative indigenous to North America that produces beautiful yellow flowers and an edible, potato-like tuber highly prized by chefs worldwide. French painter Claude Monet was captivated by the gorgeous blooms - memorializing them in a (now famous) 1880 oil painting. They are fantastic pollinator plants, blooming late in the season when other flowers have faded and other forage is hard to find.

German for “white truffle,” Weisse Truffel is an early to mid-season variety averaging. 6 ft. tall with mildew resistance and good fall leaf retention. A very heavy producer of uniform, small-to-medium round and oblong shaped white tubers. Easy-to-harvest tubers grow along the main stem with fewer stolons (runners) than other varieties. They boast nearly white (edible) “skins” and white flesh and are easy-to-clean or use whole without slicing. Mild flavor eaten raw. A good “commercial” sunchoke for culinary uses and farmers markets. Produces smaller round tubers in light shade or pots.
